Chickpea curry

For an Indian-style chickpea curry, skin the tomatoes, dice them and set them aside. Peel the onions and mix in the blender with ginger and garlic in equal quantities. Set aside. Warm a few tablespoons of extra virgin olive oil in the pan, add the purée and spices (curcuma, garam masala, coriander, cumin seeds, red chilly). Mix and cook for a few minutes on a medium fire. Add the tomatoes and cook for about 15 min. Then add the boiled chickpeas and salt to taste, lower the flame and cook for 5 minutes. Dress the dish with coriander and serve with chapati bread.
