Open the oysters, remove them with a sharp knife and dry on a dishcloth. Beat the egg and water in a bowl with a pinch of salt. Add a few spices to the breadcrumbs, if you like, without covering the flavour of the oysters. Dip the oysters in the beaten egg and then in the breadcrumbs. Then dip once again in the egg and again in the breadcrumbs. Place the battered oysters on a grill and leave them to dry for half an hour. Warm the extra virgin olive oil and fry the oysters for max. 3-4 minutes. Drain on kitchen paper and serve warm.
